Sankranti - Til Atta laddoo

Til gud kha, ane gud gud bola… Makar Sankranti is here and we’ve bought a healthy, high-protein version of your favorite til atta laddoo, without changing the authentic ‘ghar ka taste’.

Ingredients:

  • 1 cup sesame seeds (til)
  • 1 cup Protein Chef’s High Protein Atta
  • 1 cup jaggery, grated
  • 1/2 cup ghee (clarified butter)
  • 1/2 teaspoon cardamom powder
  • Chopped nuts (optional, for garnish)

Preparation method:

Heat a pan over medium flame. Dry roast the sesame seeds until they turn golden brown and release a nutty aroma. Set them aside.

In the same pan, add the atta and roast it in ghee until it turns golden brown. Keep stirring to avoid burning. Once done, remove from heat and let it cool.

In a separate pan, melt the grated jaggery with a little water to form a syrup. Strain to remove impurities. Heat the jaggery syrup in the pan until it reaches a soft ball consistency. To check the consistency, drop a little syrup into a bowl of water – it should form a soft ball that can be easily flattened. Be cautious not to overcook it.

Combine the roasted sesame seeds and wheat flour in a large mixing bowl.Pour the hot jaggery syrup over the sesame seeds and wheat flour mixture. Mix well to combine.

Allow the mixture to cool slightly so that it can be handled comfortably. Grease your hands with a little ghee and shape the mixture into small, round laddoos.

If you like, you can garnish the laddoos with chopped nuts or press a few pieces into each laddoo.

Let the laddoos cool completely before storing them in an airtight container.
